My own Mutton Masala
This is my version of Mutton Masala. Yet to name it. Suggestions are welcome.
Serves 4
Ingredients:
Mutton: 2 lbs cut in to small pieces, cleaned & drained of excess water.
Turmeric powder - 1/2 tbsp
Coriander powder - 1.5-2 tbsp
Chilly powder - 1 tbsp
Garam Masala - 1.5-2 tbsp
Salt - As required
Step 1: Mix the above with very little water, and keep aside for an hour (More the better). Add a little excess salt at this point.
To Grind 1 (Dry Grind Coarsely without water)
Black Pepper Corns: 2 tsp
Fennel seeds (Perum Jeerakam): 1 tsp
Step 2: Grind the above first and keep separately.
To Grind 2 (Dry Grind Coarsely without water)
Green Chillies: 2-3
Garlic Cloves: 4-5
Ginger: 2x1 inch piece

Step 3: Grind the above first and keep separately.
To Grind 3 (Dry Grind Coarsely without water)
In a kadai add 3 tsp cooking oil, Add the following and saute until translucent.
Red Onion: 2 medium, chopped finely
Tomato: 1, chopped finely
Step4: Once cool, Grind it to a half paste (not fine paste). Keep Separately.
To Season
Coriander Leaf: 1-2 tsp
Method:
1. In a pressure cooker, add 2-3 tbsp oil, heat and add ingredients of "To Grind 1". Saute for a few seconds in medium heat.
2. Add ingredients of "To Grind 2" and saute until raw smell goes off (1 min in high flame)
3. Add ingredients of "To Grind 3: and saute.
4. Add the marinated mutton, stir well, add little water to semi submerge the mutton (Water oozes out of the meat during cooking). Pressure Cook until done (My pressure takes about 8 whistles). This varies on the cooker.
5. Switch off and allow to cool.
6. Open the pressure cooker and bring it to boil again.
7. Once the contents begin to boil, check salt & spice levels and Adjust accordingly.
8. In low flame, allow to simmer for 20 minutes or till desired consistency (gravy) is obtained.
9. Garnish with coriander.
Serve hot. Goes well with rice, roti items, dosa or even bread.
